A refreshing lunch for hot days

It’s ridiculously hot here in Vienna at the moment, so I was longing for something fresh and simple but still has some substance to it (I’ve been working out a lot recently and I’m basically constantly hungry + I love love love pasta!). This pasta salad is just that: Watermelon and mint are super refreshing, the slight sweetness of the watermelon contrasts the sourness of lime and feta, rocket adds a nice slightly bitter twang and bell peppers add a great crunch. You see, it’s a great combination!

The heat is making me too tired to write more, so let’s get started! 🙂

Serves 4


For the salad
400g pasta
200g shrimps, cooked
300g fresh watermelon, cubed
200g feta, cubed
3 spring onions, finely sliced
1 green bell pepper, cored, cubed
6 handful rocket
a small bunch of fresh mint, leaves picked, finely sliced

For the lime vinaigrette
6 tbsp olive oil extra vergine
juice of 2 limes
1/2 dried chili, crumbled
salt, pepper

1. Cook the pasta in a large pan of boiling salted water until al dente. Drain in a colander and leave to cool off.

2. In the meantime, prepare the the lime vinaigrette: mix lime juice and olive oil, add the crumbled dried chili and season to taste with salt and pepper.

3. Toss shrimps, watermelon, feta, spring onion, bell pepper, rocket and mint in a bowl with the cool pasta. Stir in the vinaigrette and mix well.

Serve with a glass of iced water and enjoy a little refreshment on a hot day!
